Iskandar has a rich flavour and aroma that combines the tenderness of meat with the fragrance of spices. It is usually served with souhapiki fried in butter and accompanied by a sauce based on yoghurt and melted butter (called 'tel' kaima') to give the dish a creamy consistency and tenderness.
